Yaosan is a long-established specialty shop in central Kyoto dedicated exclusively to Yuzu Miso, a fragrant seasoning made from Japanese citrus and miso. Founded in 1727, the shop has preserved its secret recipe for nearly 300 years.
According to tradition, the founder, Yahataya Sanshiro, created the recipe while operating a vegetarian catering business, adapting flavors said to have been favored by the great tea master Sen no Rikyu.
The refined taste of Yaosan’s yuzu miso has been presented to the Imperial Household and important temples and shrines for generations. The shop’s signature yuzu-shaped ceramic container, available only at the Kyoto flagship store, is also a popular souvenir.
